Recipe: Roast duck- Vịt quay

Unlike Peking duck that normally takes 5 days to prepare, my roast duck is simpler. It takes about half a day to make. So don't expect the skin to be as crispy as peking duck, but the flavor and look of it is incredible. In Vietnam, duck could be roasted in a clay churn or in an open charcoal oven where the ducks are pierced and rotate around a stick.
- 1 whole duck abt 1.5kg (3 lbs)
- Mix 1: To Rub
- 1 thumb-size piece ginger
- 1 tbsp cooking wine or strong alcohol like volka
- 1 tsp salt
- Mix 2: To marinate
- 5 g Vietnamese five-spice powder
- 1 tsp salt
- 2 tsp sugar
- 1 tsp chicken stock powder
- 1/2 tsp pepper
- 1 tsp grated garlic or garlic powder
- 1 tsp cooking wine
- 2 tbsp oyster sauce
- 3 scallions
- 3 slices ginger
- 1/2 tsp annatto powder or paprika powder
- Mix 3: To Poach
- 2 liters water
- 2 tbsp soy sauce
- 2 tbsp vinegar
- 2 tbsp honey
- 2 star anise
- Mix 4: To Glaze
- 2 tbsp vinegar
- 1 tbsp maltose
- 1/2 tsp annatto powder
- cucumber and carrot cut into sticks
- green onion leaves finely shreded and soaked in cold water
- rice paper
To make Mai Que Lo Wine, roast the following spices in a pan till fragrant (about 3 minutes). Insert in a cloth bag and leave submerged in the volka/rice wine for 1 month or longer.
- 2 Star anise
- 1/2 Cinnamon
- 3 Cloves
- 3g Dried Citrus Peel
- 1/2 tsp pepper corns
- 300ml Vodka
