Vegan mushroom and taro balls | Chả viên chay

Ingredients
- 450 gr taro peeled and sliced
- 150 gr king oyster mushrooms
- 2 tbsp lemongrass minced
- 1 tbsp shallot minced
- 2 tbsp tapioca starch
- 1 tbsp plain flour
- 1 tbsp stock powder
- 1 tbsp sugar
- 1 tbsp toasted sesame
- 1 tbsp vegan oyster sauce
Instructions
- Steam the taro for 15 minutes until fork tender. Blanch the minced mushroom in boiling water and squeeze off excess water.
- in a large mixing bowl, mash taro with a fork and combine with mushroom, lemongrass, shallot, stock powder, sugar, and vegan oyster sauce. Mix well till incorporated. Then divide and shape into small balls (about 1 teaspoon size).
- Deep fry the balls till golden brown. Serve with chili sauce.
