Tamarind Pork Chop - Thịt Heo Cốt Lết Rim Sốt Me

It's an incrediblely juicy and tasty dish of pork chop, glazed with a sweet, sour and savory sauce. This dish will drive pork chop fans crazy! It's just a piece of cake to make this dish. It goes great with a bowl of hot steamed rice.
- 2 steak pork loin
- 50 g tamarind
- 2 stalks green onion cut into shorter lengths
- 1/2 onion cut lengthwise into slices
- 5 gloves garlic minced
- 1 tbsp tomato paste
- 1 tbsp sweetened condensed milk
- 1 tbsp cooking wine
- 1.5 tsp stock powder
- 1.5 tsp pepper
- 1 tbsp fish sauce
- 1/2 tsp salt
- 50 g sugar
- Soak the tamarind in half a cup of hot water. Crush well then let the mixture go through a sift.
- Combine 2tbsp of minced garlic with cooking wine. Mix well them compress to extract the garlic juice.
- Season the pork loin steaks with stock powder, pepper, garlic juice, sweetened condensed milk. Mix well and leave to merinate for about an hour.
- In a pan: heat some oil, pan-fry the pork loin steaks until cook through and get greasier on both sides.
- Heat up some oil and sauté some minced garlic until fragrant. Add the tamarind juice, tomato paste, fish sauce, salt and sugar. Have a taste and adjust the flavour the achieve the balance between sweet, sour and savory.
- When the sauce is slightly thickened, add the pork chop. Occasionally flip to coat each piece with the shiny and glossy layer of the sauce.
- Add the green onion and the onion slices.
