Pineapple Peanut Candy - Kẹo dứa mè đậu

The sweet and sour taste from the pineapple with a kick of ginger and the crunchies from peanuts will definitely make your whole family love it.

  • Peel and julienne ginger. Rinse a few times to reduce the stinging.
  • Peel, core and thinly slice pineapple. Combine with sugar and leave to marinate for about 4 hours.
  • After 4 hours, drain and squeeze to extract the sugar syrup, keep the pineapple aside. Transfer the syrup to a large wok, bring to boil and simmer over medium heat until slightly thicken. Put the pineapple back in and continue to cook until the water almost evaporate.
  • Lower the heat, add ginger and stir constantly for about 1 hour until the mixture soft and sticky like jam then pour orange juice in and mix well.
  • Combine pineapple mixture with roasted peanut and sesame seeds.
  • Turn off the stove and quickly tranfer candy mixture to a tray line with parchment paper for shaping and drying. Cover with another piece of parchment paper, use rolling pin to roll out to the thickness of about 1 cm.
  • Wait until the candy completely cool down and use a knife to cut the candy into bite size piece. You can put the tray into the fridge to speed up the cool-down process.
