Sweet& spicy baked salmon - Cá hồi nướng ngọt & cay

Ingredients
- 1/2 kg salmon steak
- 1 tbsp rainbow peppercorn
- 1/2 onion
- fried chilies
- Fish sauce
- oyster sauce
- brown sugar
- lime
- cilantro
Instructions
- one salmon steak (about 1 lb), 1 tbsp Soeos rainbow peppercorns, a few dried chilies, fish sauce, oyster sauce, brown sugar, ½ an onion and 4 cloves garlic. And a lime and cilantro for garnish.
- Soak the dried chili in warm water till softened. Combine the soaked dried chilis, peeled garlic, 1 tbsp fish sauce (or ½ tsp salt), 1 tbsp brown sugar in a food processor. Add 1 tbsp oyster sauce, 1 tbsp cooking oil and blend till smooth.
- Place the salmon steak on a baking dish lined with aluminum foil. Spread the chili paste on all sides of the salmon steak. Roughly crush the rainbow peppercorn and sprinkle on top.
Bake salmon 12 to 15 minutes in the 200C/400F preheated oven, or until fish is easily flaked with a fork..
- Garnish with some chopped cilantro and a few fresh lime slices which will help cut through the heat and adds freshness.
