Vegan Pineapple Fried Rice is a quite popular dish in Asian regions. It’s a healthier alternative to takeout, because it’s lower in sodium, vegan and gluten-free

  • In a bowl, toss the tofu with a pinch of five-spice powder, salt and pepper.
  • Fry the tofu until golden brown. Take out and bring off the oil.
  • In a frying pan, heat 2 tbsp of vegetable oil and add 1/4 cup of diced onion and fry until it turns translucent. Then add the carrot and green pea. Stir well for about 5-10 minutes until it's tender.
  • Next, add the pineapple and the fried tofu tubes and stir well under the lower heat. Season with 1/4 tsp of salt , 1/2 tsp of chicken stock and 1 tbsp of soy sauce.
  • Add 1 cup of rice and 1/4 tsp of turmeric powder to give it a nice yellow color. Break up the rice. Then add the chopped green onion and turn off the heat.
  • Transfer the fried rice into the pineapple or a bowl. Add some cashew nuts on top. When you bake it for about 5-10 minutes in the oven, remember to wrap the leaf part in a loom to prevent it from burning. Finally, a very taste pineapple fried rice is ready to be served!
