Recipe: No-Escape Chicken- Đùi gà bó xôi

No-escape chicken is normally served at big ceremonies like wedding, engagement or house-warming parties. It is a whole chicken wrapped in cooked sticky rice and deep-fried which looks like a gigantic golden dinosaurs egg. There is also a snack version of the dish which is a deep-fried sticky rice balls stuffed with shredded chicken and diced vegetables like corn, bell peppers, green peas

  • Score the chicken drumsticks diagonally so the seasoning can absorb better into the meat. In a Ziplock bag, combine 1/3 tsp five-spice powder, 1/2 tsp grated garlic (You can also use garlic powder), 1 tsp soy sauce, ½ tsp sugar and 1 tsp oyster sauce (optional). Add the chicken and Leave to marinate for about 1 hour. Marinating in a ziplock bag helps the seasoning coat the chicken better.
  • Then deep dry or bake in the oven at 175C (350F) for 30 minutes, flipping halfway through.
  • After soaking the sticky rice for about 1 hour, drain and toss with ½ tsp salt and ¼ tsp turmeric powder to give it a nice color.
  • Add water just enough to cover the rice (about ½ cup). Cover and and microwave for 5 minutes. Take out and fluff well. Then cover and microwave for another 3 minutes.
  • Spread the sticky rice onto a piece of cling film to the thickness of 1 cm or ½ inch. Place the grilled/fried chicken drumstick in the center. Roll to wrap the drumstick securely inside the sticky rice layer.
  • Deep fry till golden brown and crispy. It’s important that you use enough oil to fully cover the food to achieve a nice evenly golden brown look.
  • Serve with some tomato and cucumber slices and some Vietnamese mint. Add some scallion oil as a finishing touch.
