Braised Beef Shank With Lotus Root - Watch how to make it on Youtube
- 400 g beef shank cut into 1-cm slices
- 400 g fresh lotus root peeled and cut into 1-cm slices
- 8 pc jujube rinsed
- 10 g ginger sliced
- 3 cloves garlic sliced
- 2 tbsp condensed milk
- 1 tbsp miso annatto
- 1 tbsp cooking wine
- 1 tbsp soy sauce
- 1 tsp stock powder
- 1/2 tsp pepper
- 3 tbsp lemongrass ground
- 1 tbsp cooking oil
- In a big bowl, combine the beef shank, soy sauce, stock powder, pepper, ground lemongrass, cooking wine, cooking oil and 2 tablespoons condensed milk. Mix well and refrigerate for 1-2 hours.
- Soak the sliced lotus root in salted water to prevent darkening.
- In a clay pot, add some vegetable oil and sauté ginger, garlic slices until fragrant. Add the marinated beef and stir well. Mix the miso paste with half a cup of water and add in. Stir well over medium heat so the beef can absorb all the great flavors.
- Add the lotus root in and stir for 2 minutes. Fill with water, lower the heat and cook for 5 minutes. Season to taste with soy sauce & stock powder.
- Add red jujube and braise for another 30 minutes over low heat until the beef is tender and fragrant and the sauce is slightly thickened.
- Ladle into a bowl and sprinkle a little chopped cilantro and scallion on top. Serve with the baguette.
