Recipe: Steamed Coconut Rice Cake w/ Dried Shrimp - Bánh Đúc Tôm Chấy

  • In a large microwavable bowl, mix together the rice flour and the tapioca starch. Soak the dried shrimps in hot water for 15 minutes to soften. Mix together 1 ¾ cup water (420ml) and ½ cup coconut milk (120ml). Then add 1 tbsp sugar, 1/2 tsp salt and 1 tbsp vegetable oil. Give it a good stir.
  • Make a hole in the middle of the flour and the starch, then gently pour in the liquid . Stir until the starch and the flour is completely dissolved. Let the batter sit for about 30 minutes to reduce the strong flour smell.
  • Then give it a good stir again and microwave at 700W for 4-5 minutes, remember to take out and stir after every 1,5 mins. After 1,5 mins, you see that the starch starts being cooked and and they gather at the side of the bowl. Give it a good stir, and then put it in the microwave again for another 1,5 mins. After about 4 minutes you'll get a very thick paste. If you don't have a microwave, you can also stir the batter on the stove over medium heat. Stir constantly until the batter thicken into the paste.
  • Transfer the paste into a square container. Use a spatula to even the surface . Put it into a steamer and steam for 20 mins. To prevent the water from dripping into the cake, wrap the lid in a piece of kitchen towel
  • After soaking the dried shrimps in hot water to soften, process finely in a food processor. Fry the processed dried shrimps in a pan without any oil until it dries out.
  • To make crunchy pickles: combine shredded carrot, daikon/green mango/kohrabi together. Then add 2 tbsp sugar and 3 tbsp white vinegar or rice vinegar. Give it a good mix and set aside for 15 minutes.
  • Add about 1-2 tbsp vegetable oil in the green onion and also a pinch of salt. Give it a good mix. Put this into the microwave for about 20 secs. Then you will have "mỡ hành" (scallion oil)
  • Let the cake cool completely, then loosen it out from the form. Cut it into diamond shape or bite-sized pieces. Add scallion oil, the dried shrimps powder over the cake, also add some pickles at the side. Drizzle the sauce over and serve.
