Pork Rib Stew with Beans is a great dish to serve in large parties as it is comforting, filling and great for both adults and children. You can give it a try at home with easy-to-find ingredients.
- 200 g navy beans (1 cup) soaked in water for at least 4 hours
- 3 tomatoes peeled, remove the seed
- 750 g pork spare ribs 1.5 lbs
- 1 tbsp vinegar
- 2 tbsp vegetable oil
- 1 tsp salt
- ½ tsp pepper
- 2 tsp sugar
- 2 tsp chicken stock
- 1 onion cut into thin slices
- 500 g carrot cut into 2-3 cm slices
- 750 ml water (3 cups)
- 2 tsp corn/tapioca starch
- 1 tbsp minced shallot
- scallion
Note: You can use a normal pot if a pressure cooker is not available. The cooking time should be longer, about 30-40 minutes.
