Recipe: Shrimps coated in salted egg yolk- Tôm chiên trứng muối

Shrimps coated in salted egg yolk is a savoury dish, great to serve as an appetizer or simply with steamed rice for your family meal.

  • To make salted egg, you can use duck or chicken egg as you prefer. Crack the egg open and separate the yolk. Into the shell half, add 1/3 tsp salt. Shake gently. Then transfer the yolk over and sprinkle another 1/3 tsp salt over it. Cover with plastic wrap and keep in the refrigerator! Next day you can take out and see the magic! The yolk has firmed up and look shining beautiful! Gently rinse with some water and voila!
  • Next, steam the firm yolks for 3-5 minutes. Then crush them finely with the back of a spoon.
  • Mix 2 tbsp corn starch with 1.5 tbsp water. You can also use tempura flour or plain flour. Stir well.
  • In a pan heat vegetable oil till nice and hot. Then turn the heat to medium low. Dip the shrimp in the batter and fry till both side turn golden brown, for about 5-6 minutes only, as shrimp cooks very quickly
  • Then when golden brown, remove the shrimps and transfer to a plate. Remove some of the oil. Keep about 1 tbsp oil in the pan. Over medium high heat, add the crushed salted egg yolk and stir constantly till it melts and foams up! So nice. It only foams up like this when you use enough oil. If you use too little oil, the yolk will be dry and crumbly. Too much oil will make the dish too oily. So use just abt 1 tbsp for this step, ok! Add a pinch of sugar to balance out the saltiness of the yolk. Then add the fried shrimp and toss well.
  • Finally chop up some scallion and chili peppers and toss well. To serve, transfer to a plate, garnish with some pepper and cilantro.
