Crispy deep-fried calamari squid rings tossed in a tasty, creamy, spicy, and buttery salted egg yolk sauce. This could easily become your favorite way to enjoy squid. Let's get cooking!
- 300 g calamari
- 60 g panko bread crumbs
- 60 g tempura flour
- 1 tbsp all-purpose flour
- 2 egg
- 2 salted egg yolks
- 2 tbsp condensed milk
- 40 g butter
- 2 tbsp garlic minced
- Peel and discard the innards of the calamari. Rinse well and cut into rings.
- Crack 2 eggs in a bowl and beat well. Dip the calamari rings into the beaten egg then roll over the tempura flour, back to the beaten egg, and then roll over the bread crumbs.
- Deep fry till golden brown and place on paper towel to drain off the excess oil.
- Rinse the salted egg with cooking wine. Steam for about 10 minutes. Combine in a food processor with 2 tablespoons of sweetened condensed milk, 2 tablespoons of chili sauce, and then blitz away.
- In a pan, sauté some minced garlic until fragrant. Add the salted egg sauce. Mix the all-purpose flour with 1/4 cup water, and stir in to thicken the sauce.
- Add the fried calamari rings into the sauce, and toss well so that they are well coated with the sauce.
- Garnish with some chili flakes and serve as a side dish with rice or as a drinking snack.
