Instructions
  • Soak the sticky rice in water for 1 hour.
  • In a pan, combine 50 ml coconut milk with 15g sugar and a pinch of salt, cook until sugar dissolve. Add sticky rice, cook, and stir fry for 5 minutes until the rice absorbs all the coconut milk.
  • Add grated coconut and transfer to the steamer. Add few pandan leaves. Cover the lid and steam for about 50 minutes.
  • In a pan, combine 250ml coconut milk and 50g sugar, stir over low heat until the sugar dissolve. In a bowl, mix a teaspoon of tapioca flour with some water and pour in to thicken. Add pandan leaves and bring to boil, then turn off the heat.
  • Cut ripe mango into slices.
  • Arrange steamed sticky rice and mango slices on a plate. Pour the coconut over, garnish a pinch of toasted sesame seeds.
