Recipe: Braised Mackerel w/ Pineapple - Cá nục kho thơm

    • Season the mackerel with chicken stock, pepper, chili flakes, sugar and salt (1/2 tsp each); and chopped green onion the white part. Mix well and rub this all over the fish. Then cover and chill in the fridge for about 30 mins.
    • Place the fish and pineapple into a sacuepan with some chili pepper and the white part of the green onion. Add 3 tbsp fish sauce.
    • Heat 2 tbsp vegetable oil in a saucepan and sprinkle some 2 tsp sugar. Let the sugar melt, when the color turns to caramel, quickly pour it over the fish.
    • Bring the fish to a boil and cook for about 10 mins, after that, flip and cook for another 10 mins. If you want to have more sauce, pour in hot water.
    • Cook for about 15 more minutes on medium low, then season to your taste. Transfer the fish to plate, sprinkle some pepper and we have a delicious dish to serve with rice or noodle.
