Vegetarian stir-fry noodles

Egg noodle is a typical Chinese noodle which is quite popular in the South of Vietnam. This dish is very simple and quick to make. In this recipe, I will use egg noodles to make vegetarian fried noodles. I also add more vegetables and mushrooms to make the dish not only rich in nutrients but also eye-catching.   • To make stir-fry sauce, combine 1 tbsp sugar, 2 tbsp soy sauce, 1 tbsp vegetarian oyster sauce, 1 tbsp ketchup, 1 tbsp chili sauce, ½ tsp vegetable/mushroom stock powder, 3-4 tbsp filtered water and stir until dissolved.
  • In a pan, heat 2-3 tbsp vegetable oil and saute the leek slices. Add shiitake mushrooms, tofu, carrots, season with 2 tbsp sauce and stir fry for 2 minutes until mushrooms are cooked.
  • Blanch egg noodles in boiling water for 3-4 minutes until soft. Then, rinse the noodles with cold water.
  • Add the egg noodles to the pan and stir well. Depending on the amount of noodles, you can add more or less sauce to taste.
  • Add shredded cabbage and some chives, celery and bean sprouts to make the dish healthier.
