Thịt Kho Tàu - Caramelized Pork & Eggs

Caramelized Pork & Eggs is super familiar with many Vietnamese. Specially during the Lunar New Year, it is one of the indispensable dishes.

- 1 kg pork belly Rubbed with lemon, diced into 5-cm blocks
- 5 egg
- 2 tbsp sugar
- 2 tbsp condensed milk
- 1 liter fresh coconut juice
- cooking oil
- 1 tbsp vinegar
- 2 tbsp garlic minced
- scallion minced
- 1/2 cup fish sauce
- In a medium bowl, combine the pork with 1 tablespoon sugar and 2 tablespoon condensed milk, marinate for 1 hour in a well ventilated area. This will help the pork clearer and more fragrant when cooked.
- In a saucepan, combine 1 tablespoon vinegar and 1 liter water, bring to a boil. Gently lower the eggs into the saucepan. Simmer for about 12 minutes until the egg cooked through. Transfer to a plastic box with a little water and shake well, but not too hard. This will help you peel the eggs super quickly and remained well.
- In a pan, add 1 tablespoon cooking oil and sprinkle 1 tablespoon sugar. When the sugar starts to melt, add 2 tbsp of minced garlic & scallion and fry until fragrant. When the sugar turns into golden brown color, add the pork, sear 2 sides of the meat over medium heat.
- Pour in 1 liter fresh coconut juice. Bring to a boil over medium heat. Skimming the scum that forms on the surface.
- Add the boiled egg and ½ cup fish sauce.
- Simmer over low heat for about 1 hour until the meat is tender but not crushed.
- The broth is clear, the pork is soft and fragrant, the eggs are soaked in the rich gravy.
- Ladle to the bowl to serve hot with rice or sticky rice. It would be hard to resist.
