BUTTER BEEF – Bò Lăn Bơ

Butter beef seems to be widely known among the overseas Vietnamese but is not a popular dish in Vietnam. However, it's a worth-trying appetizer with easy-to-find ingredients. Let give it a try!
- 2 cloves garlic cut into thin slices
- 2 shallots cut into thin slices
- 1 egg plant cut into thin slices on the diagonal, soaked in water
- 1 knob ginger julienned
- 1/2 pineapple peeled, eyes-removed and cut into chunks
- 1 tbsp sugar
- 500 g beef cut into thin slices against the grain
- salt
- pepper
- chilli flakes
- 10 lady fingers (okra) sterm removed and cut into thin slices
- 1 green chilli
- 1 head lettuce
- fresh Vietnamese herb
- 20 g butter
- 1-2 red chilli
- rice paper
- rice vermicelli
- anchovy sauce
- Transfer the pineapple to a food processor with two large cloves to garlic , 2 chillies and 1 tbsp of sugar . Process until you get fine paste. You can use pineapple in a can.
- Transfer to a bowl, depend on the saltiness of the anchovy sauce, add 3 tbsp to a quarter or third cup. Have a tight and and add more or less to your liking.
- In another bowl, season the beef lightly with some salt, pepper and chilli flake. Mix well and set aside.
- Arrange everything on the platter , use a small bowl turned upside down and place the beef slices on top. You also need a plate of lettuce and Vietnamese herbs ( mint, cilantro...)

- On a hot plate, melt a large cube of butter until it's completely melted. Then add the garlic, shallot and ginger to make it fragrant. Take a large slice of beef and quickly deep into the hot butter. If you like eating rare, fry the beef in the butter for just a few seconds. Fry the egg plant and okra .
- To serve, take a piece of rice paper and dip into the water to soften. Then place it on a plate and arrange the vegetables, some rice vermicelli on top, a slice of beef, some okra and quickly roll it up. Dip into the sauce and enjoy its taste!
