Tofu is definitely the main source of protein for Vietnamese vegetarians. Here in Vietnam, most people eat vegetarian on full moon and new moon day following Buddhist tradition. And of course tofu shops are most busy on those days.
- 1 block fried tofu Cut into 1.5-inch cubes
- 1/4 pineapple
- 100 g straw mushrooms cut in half
- green onion chopped
- pepper
- shallot sliced
- **Sauce**
- 1 tsp sugar
- 1 tsp vegan oyster sauce
- 1 tsp soy sauce
- 1 tsp chili sauce
- 2 tbsp water
- Season the fried tofu cubes with salt and pepper on both sides.
- Heat some oil in a saucepan, fry some sliced shallot till fragant. Then add pineapple and 1 tsp sugar. Stir and cook on low for 2-3 minutes till slightly caramelized.
- Next, add vegan oyster sauce, soy sauce and chili sauce and some water. Toss in the tofu and straw mushrooms. Add some more water and simmer on medium low for 10 minutes until the pineapple flavor is absorbed into the tofu.
- Serve hot with a sprinkle of pepper and chopped green onion and steamed rice.
