If you are vegan and have cravings for a savory snack, I would recommend trying out this mushroom jerky with lime leaves. It's the vegan version of Khô gà lá chanh or shredded chicken jerky with lime leaves.

Instructions
  • Soak the oyster mushrooms in salted water for about 5 minutes, rinse well and squeeze out the excess water. Shred the mushrooms along the grains into strips. Then spread down on the baking tray and dehydrate using a dehydrator or an oven at 120 degrees celsius for about 15 to 20 minutes.
  • Gather the mushrooms in a bowl, add a teaspoon of minced garlic, half a teaspoon of five-spice powder, a teaspoon of vegan oyster sauce, 2 teaspoon sugar, half a teaspoon of mushroom stock powder, a teaspoon of soy sauce, a teaspoon of turmeric powder and a teaspoon of chili flakes.
  • Toss well and leave to marinate for about an hour.
  • Add a teaspoon of vegetable oil, toss well and transfer to a non-stick pan. Keep stirring over medium-low heat for about 15 to 20 minutes until fluffy and dried.
  • Add the shredded lime leaves during the last five minutes and keep stirring until done.
