Caramelized Seitan In Coconut Juice

Caramelized seitan in coconut juice is a simple vegetarian dish that you can put up in just 15 minutes, but it goes so good with rice that you will keep making over and over again.
- Pat the wheat gluten dry and pan fry until golden brown on both sides. Remove the seitan, keep the oil in the pan and sprinkle a tablespoon of sugar over the base. Cook on low until the sugar melts and gets caramelized.
- Then add a tablespoon of minced leek the white part only, and sauté until fragrant. Add the fried seitan and flip to coat each piece with the caramel.
- Then add coconut juice, 2 tablespoons of soy sauce, and some stock powder to taste. Lower the heat and simmer until the sauce is thickened.
- Occasionally flip the seitan to be fully coated with the sauce. Serve with a sprinkle of black pepper or sesame and some chopped Vietnamese mint.
