Green Sticky Rice Patties - Chả Cốm

The Green Sticky Rice Patties are crispy on the outside, glutinous on the inside with the green sticky rice. Very fragrant and delicious. Can be served as a snack or serve as a topping on a bún đậu mắm tôm tray.
- 50 g pork minced
- 100 g pork paste
- 50 g green sticky rice
- 1 tbsp corn starch
- 1/2 egg beaten
- 2/3 tbsp stock powder
- 1/2 tsp pepper
- 1 tbsp garlic minced
- Combine the green sticky rice with the beaten egg. Mix well and leave to sit for
about 10mins.
- In the large mixing bowl: Combine the minced pork, pork paste, the green sticky rice and egg mixture. Season with some stock powder, pepper, cornstarch and minced garlic. Put on gloves and mix well.
- When it all comes together, divide and shape into patties. Place on a greased plate and refrigerate for about 1hr then steam for about 15mins, so the green sticky rice can bloom well.
- Pat dry and pan fry until golden brown on both sides.
