  • Cut the salted eggs into small cubes.
  • Dice the pork fat into small cubes.
  • Finely chop 5 mantis shrimps.
  • Clean the small shrimps and finely chop them.
  • Mix together the pork belly, chopped small shrimps, chopped mantis shrimps, pork fat, salted eggs, coriander, spring onions, minced shallots, fish sauce, ground pepper, sugar, and chicken powder. Mix well until the mixture is evenly combined. Take a portion of the mixture, shape it into round patties, then place a mantis shrimp on top of each patty. Repeat until all the mixture is used.
  • Steam the patties with mantis shrimps for 5 minutes.
  • Heat oil in a frying pan. Once the oil is hot, fry the patties until golden brown.
  • Serve on a plate with chili sauce on the side for dipping.
