Mantis shrimp patties with salted egg is a tempting dish. The mixture of mantis shrimp, pork, and salted egg is finely chopped and fried until crispy. It is often served with fresh herbs and sweet and sour fish sauce. The delicious aroma and unique flavor of salted egg combined with the sweetness of mantis shrimp create a remarkable culinary experience.
- 10 mantis shrimps
- 300 g pork belly
- 100 g shrimps
- 50 g pork fat
- 4 salted eggs
- Spring onions finely chopped
- Coriander finely chopped
- 1 tbsp minced shallots
- 1 tbsp chicken powder
- 1 tsp fish sauce
- 1/2 tsp pepper
- 1 tsp sugar
- Cut the salted eggs into small cubes.
- Dice the pork fat into small cubes.
- Finely chop 5 mantis shrimps.
- Clean the small shrimps and finely chop them.
- Mix together the pork belly, chopped small shrimps, chopped mantis shrimps, pork fat, salted eggs, coriander, spring onions, minced shallots, fish sauce, ground pepper, sugar, and chicken powder. Mix well until the mixture is evenly combined. Take a portion of the mixture, shape it into round patties, then place a mantis shrimp on top of each patty. Repeat until all the mixture is used.
- Steam the patties with mantis shrimps for 5 minutes.
- Heat oil in a frying pan. Once the oil is hot, fry the patties until golden brown.
- Serve on a plate with chili sauce on the side for dipping.
