Instructions
  • Remove the skin from the fish entirely, rinse and let it dry. Season lightly both sides of the fillets with some salt and pepper.
  • In a separate medium-sized mixing bowl, combine 4 tablespoons of all-purpose flour, 2 tablespoons of rice flour, salt, 120ml soda water. Stir until you have a thick and smooth batter.
  • Place the 2 tablespoons of remaining flour into a shallow plate. Toss each fish fillet in the flour and shake off any excess. Dip into the batter, coating the entire fillet. Carefully lower each fillet into the hot oil and deep fry until the batter is crisp and golden.
  • Deep fry frozen potatoes in hot oil. Or you can coat them lightly with cooking oil and use an air fryer to cook with a garlic halved crosswise. Set at 200 Celsius degrees for 15 minutes, sometimes take out and shake the chips until golden and crisp.
  • Remove the chips from the oil and drain. Season with salt, pepper, chili powder and minced cilantro.
  • To make the tartar sauce, chop the pickled baby cucumber and onion finely, then mix with 2 tablespoons of Heinz Mayonnaise and a pinch of salt and pepper.
