Sticky rice and mung beans are stable ingredients of the Vietnamese kitchen. We have created many dishes just from these two ingredients like “xôi vò”, “xôi khúc”, “xôi xéo”. Today I show you how to make the easiest version of them all, using a rice cooker by adding coconut milk and shredded coconut. The sticky rice dish becomes much more fragrant and tasty, the dish is called “Xôi dừa đậu xanh”. Let's begin!

  • Soak the sticky rice and mung beans in water for about 1 hour. Rinse well and drain.
  • In a rice cooker, combine the sticky rice, mung beans with half a tsp of salt, and toss well. Add the coconut milk and water, just enough to barely cover the rice. If the liquid level is higher than the rice level, the cooked sticky rice will become soggy. Tie a pandan leaf into a knot and add to the rice to add a nicer aroma. Just press "cook" and let the rice cooker does its job.
  • Transfer to a serving plate, and top with the pork floss, shredded young coconut, and fried shallots. You can also serve with a peanut and sesame mix.
