Sweet potato sticky rice cake with cheese | Bánh nếp khoai lang phô mai

Sweet potato sticky rice cake with cheese is a wonderful combination of the softness of sweet potatoes and the chewiness of sticky rice. The addition of cheese enhances the delicious aroma and richness, creating a tasty and enticing snack.
- 100 g yellow sweet potatoes
- 150 g glutinous rice flour
- 90 ml hot water
- 60 g mozzarella cheese
- 6 tbsp sugar
- 1 tsp salt
- Peel and wash the sweet potatoes. Steam for 25 minutes. Remove from heat, add 1/2 tsp salt, 3 tsp sugar, mash until smooth. Take about 10 minutes to roll the sweet potatoes into round balls, flatten them, add mozzarella cheese in the center, wrap the cheese, and shape into balls.
- Place glutinous rice flour in a bowl, add salt, sugar, mix well. Add hot water, knead until smooth, let the dough rest for 15 minutes. Take about 15g of dough, shape into round balls, flatten them, place a sweet potato ball in the center, wrap and flatten again.
- Heat oil in a pan, place the cakes in the pan, cook both sides over low heat, cover with a lid until the cakes are soft and golden on both sides.
