Sweet potato balls | khoai lang bong bóng

Sweet potato balls is a must-try street food when visiting Taiwan. Each perfectly round, golden sweet potato ball is visually enticing and offers a gentle sweetness. It's perfect for snacking on chilly days.
- 200 g yellow sweet potatoes
- 3 tbsp sugar
- 100 g cornstarch
- 50 ml boiling water
- Peel and wash the sweet potatoes. Slice into thin rounds about 1cm thick. Steam the sweet potatoes for 25 minutes, then remove and mash them. Add sugar, cornstarch, water, mix well until smooth. Shape the sweet potato mixture into small balls, about 7-10g each.
- Heat oil in a pan. Once the oil is hot, fry the sweet potato balls until golden and crispy. Use a spoon to stir or gently press the sweet potatoes while frying to create a fluffy texture.
