"Banh mi thit nuong" which is Vietnamese sandwich with grilled pork, is the special version of "banh mi". This is one of the most popular breakfast in Vietnam.
- 250 g pork minced or thinly sliced
- 1 tbsp minced shallot
- 1/2 tbsp minced garlic
- 1 tbsp fish sauce
- 1/2 tbsp sugar
- 1/2 tsp pepper
- 1 tbsp caramel sauce or honey
- 1 ½ tsp oyster sauce
- 1 tbsp. sesame seeds
- 1 pinch salt
- 1 egg
- 1 tsp sugar
- 1 tbsp peper
- 100 ml oil
- cucumber Cut into long slices
- Serrano or jalapeno pepper cut into slices on the diagonal
- pickles, chili, coriander
- maggi sauce
- 1/8 tsp five-spice powder
- 1 tbsp minced lemongrass
- carrot and daikon cut into thick slices
- In a mixing bowl, season the minced pork with minced shallot, garlic, 1/2 tsp black pepper, 1 tbsp sugar and 1 tbsp caramel sauce or honey .
- Then add 1 tbsp minced lemongrass and 1/8 tsp 5-spice powder, 1 ½ tsp oyster sauce, some stock powder (optional) and 1 tbsp. sesame seeds. Mix well and set aside.
- To make mayo sauce: Separate 1 egg to get the yolk. Add a pinch of salt, pepper and 1 tsp sugar. Whisk constantly with a balloon whisk till combined. Then very slowly add vegetable oil, just a few drops at a time. And continue whisking till thick and creamy. For 1 yolk you can add up to 100ml oil. When it becomes thick, you can add a few drops of lime juice to loosen it out.
- Toss carrot and daikon with some salt. Leave to sit for 15 minutes until they quilt and release some water. Rinse a few times to get rid of the salt. Then squeeze out the excess water and toss with sugar and vinegar.
- Pinch a good tbsp. amount and shape into nice little patties. Then grill both sides till golden and cooked through. Smell so good and look amazing.
- To assemble the sandwich, split all the way through from top to bottom on one side to open, leaving the other still attached. Spread a thin layer of the mayo. Add some pate. Add the grilled pork, some cucumber and the pickles, chili, coriander as a finishning tough
Drizzle some maggi sauce.
