Matcha mochi with coconut milk is a delicious and easy-to-make dessert, featuring soft and smooth mochi with a hint of subtle bitterness from matcha, perfectly complemented by creamy coconut milk. This is definitely a tasty treat not to be missed for matcha lovers.
- 1 tsp matcha powder
- 2 tbsp glutinous rice flour
- 1 tbsp bột năng
- 250 ml water
- 9 tbsp sugar
- 100 ml coconut milk
- 200 ml coconut water
- 100 g coconut flesh
- 100 ml milk
- 1/2 tsp salt
- 5 pandan leaves
- In a bowl, combine matcha powder, glutinous rice flour, and tapioca starch. Add 5 tbsp sugar and 250ml water, mix well until the mixture is smooth. Heat a pan over low heat, pour the mixture into the pan, and stir constantly until it thickens. Turn off the heat and transfer the mixture into a piping bag.
- Prepare a bowl of ice water. Squeeze out small portions of the mixture onto a spoon with a round mold, then drop them into the bowl of ice water to form small mochi balls.
- In a pot, combine coconut milk, coconut water, fresh milk, 4 tbsp sugar, a pinch of salt, coconut flesh (cut into small pieces), and pandan leaves. Cook over low heat until the mixture comes to a gentle boil.
- Serve the mochi balls in a bowl, pour coconut milk over them, and garnish with shredded coconut and toasted sesame seeds on top. Enjoy!
