Stir-fried yardlong bean with sambal chili paste | Đậu đũa xào sa tế sambal

Drawing inspiration from Malaysia, stir-fried sambal tempeh has become an indispensable part of the distinctive cuisine of this region. With its unique flavor, tantalizing the taste buds, and the delicate combination of tempeh, sambal sauce, and meat, it creates a unique harmony on the dining table. Tempeh is coated with a rich and flavorful sauce. Stir-fried sambal tempeh is often served with white rice as a main dish.
- 200 g yardlong beans
- 1/2 onion
- 50 g dried shrimp
- 1 dried chili
- 1 chili
- 2 shallots
- 3 cloves garlic
- 1 tbsp palm sugar
- tsp fermented shrimp paste
- 1 tbsp fish sauce
- Trim and cut yardlong beans into 4cm pieces, then rinse thoroughly.
- Slice the onion.
- Soak dried shrimp in water for about 2 hours.
- Grind the dried chili, fresh chili, shallots, and 4 cloves of garlic into a paste. Add the soaked dried shrimp into the mortar, along with 1 tsp of fermented shrimp paste, fish sauce, and 1 tsp of palm sugar. Mix well.
- Heat oil in a pan, sauté minced garlic until fragrant, add pork slices and stir-fry until browned. Add sliced onion, then pour in the prepared sauce mixture and cook for about 3 minutes. Next, add yardlong beans and 70ml of boiling water, simmer until the sauce thickens slightly, then turn off the heat.
- Transfer the dish to a serving plate and serve hot with rice.
