"Vietnamese Crab and mantis shrimp noodle soup" is a delicate combination of soft vermicelli noodles, delicious crab, and mantis shrimp, highlighted by the rich and aromatic flavor of crab broth. The dish is complemented with fresh mantis shrimp meat, served with raw vegetables, creating a mouthwatering and tantalizing culinary experience.
- 10 mantis shrimp
- 250 g ground freshwater crab
- 2 tomatoes
- 200 g crispy tofu
- 100 g pork sausage
- Vermicelli noodles
- Raw vegetables (lettuce, herbs, bean sprouts, etc.)
- Spring onions
- Fried shallots
- 2 tbsp minced purple onions
- 2 tbsp minced garlic
- Chicken stock powder
- Fish sauce
- sugar
- Salt
- Shrimp paste
- Tamarind vinegar
- In a pot, bring the water and ground freshwater crab to a boil. Once boiling, reduce the heat and skim off the floating crab meat.
- Heat a little oil in a pan, add 1 tsp minced purple onions, 1 tsp minced garlic, and the crab paste, sauté until fragrant. Then add the quartered tomatoes and stir-fry for about 3 minutes before transferring everything to the broth pot.
- When the broth returns to a boil, add the crispy tofu and season with: 1 tsp fish sauce, 1 tsp chicken stock powder, 1 tsp sugar, 1/2 tsp salt, 1 tsp shrimp paste, and 1 tsp tamarind vinegar. Simmer for about 10 minutes, then turn off the heat.
- Heat oil in a pan, add 1 tsp minced purple onions, 1 tsp minced garlic, sauté until fragrant, then add the mantis shrimp. Season with 1/2 tsp chicken stock powder and 1 tsp fish sauce, stir-fry for about 5 minutes, then turn off the heat.
- Place vermicelli noodles in a bowl, add the stir-fried mantis shrimp, pork sausage, and crab meat. Ladle the broth over the noodles, garnish with spring onions and fried shallots.
- Serve with raw vegetables and chili fish sauce on the side.
