Toasted garlic chili peanuts- Đậu phộng cháy tỏi ớt

Toasted garlic chili peanuts is a new and trendy snack in VN, very addicting. It’s a great drinking food, or to serve with rice or porridge
- 1 cup raw peanuts washed
- 3-4 tsp salt
- 1 head garlic peeled and minced
- 2 bird-eye chilis minced
- 1/4 cup water
- 1 tbsp sugar
- To roast peanuts, in a large wok, add the peanut and salt.. Keep stirring on medium heat, constantly for about 10 minutes or until you can easily peel off the skin of the peanut. Take off heat and pour to a dry colander. Do not leave the peanut in the hot wok as the heat from the wok can continue cooking the peanuts and might burn them. Shake well to strain off all the salt.
- Heat some oil in a pan and fry the minced garlic and chili till slightly golden brown. Remove with a slotted spoon and transfer to a bowl. Mix with salt, sugar and stock powder and set aside.
- Into the pan, add ¼ cup water and 1tbsp sugar. Bring to a boil to melt the sugar completely to make a syrup.
- Then add the roasted peanuts and the garlic chili mix. Toss well and you will see the fried garlic, chili and seasonings stick to the peanuts forming a really fragrant, crunchy and tasty peanuts.
Notes:
- Peanut skins have abundant amount of natural antioxidants and a hight content of dietary fiber
