Lime & Avocado Cheesecake - Bánh Phô Mai Bơ Chanh

This avocado cheesecake is extremely charming and unique. The rich cream cheese blends so well with the sweetened condensed milk and the tangy flavor from the lime. I add chopped pink pistachios on top as a perfect garnish.

- 300 g cream cheese
- 300 ml whipping cream
- 1 avocado
- 3 lime
- 200 ml sweetened condensed milk
- 7 g gelatin powder
- 10 pc biscuits
- 100 g butter, melted
- 2 tbsp pistachio
- Place the biscuits in a grinder and grind finely. Add the melted butter and stir to combine so you will get the mixture like wet sand. Press on the sides & bottom of the mold to make the base of the cake.
- Mix Gelatin powder with water then add whipping cream in a saucepan together with gelatin mixture and boil for just 2-3 minutes over medium heat while stirring lightly until dissolved. Strain through the strainer.
- Cube the pulp of avocado, then put it in a blender with cream cheese, grind 2 lemons zest in here, squeeze in lemon juice and add some sweetened condensed milk. Blend the mixture well.
- Pour out and mix with gelatin & whipping cream mixture and stir well.
- Pour over the crust evenly. Refrigerate for 5 hours until the cake is frozen. Decorate the cake with lemon slices, sprinkle with ground lime zest and chopped pistachios.
