Crispy pork belly with Salted Plum Salt | Thịt chiên giòn lắc muối xí muội

Ingredients
- 400 gr pork belly sliced
- 2 stalks lemongrass thinly sliced on a bias
- 3 kumquats thinly sliced, seeds removed
- 1/2 a green mango cubed
- 1/2 tbs sugar
- 1 tbsp salted plum salt
- 1 tsp chili flakes
- 1 tsp fish sauce
- a few sprigs corriander
Instructions
- Deep-fry ( or air-fry) the pork till golden brown and crispy. Drain off the excess oil.
- Combine the crispy pork with the rest of ingredients in a large mixing bowl and toss well
