GRILLED EGGS WITH TOPPINGS

Ingredients
- 4 eggs
- 2 sprigs green onion chopped
- 1 tsp dried satay chili or chili sauce
- 1 tbsp minced garlic and chili
- Toppings of your choice: sausage, cooked corn, cheese, butter diced
- Fish sauce, sugar, vegetable oil
Instructions
- To make scallion oil, in a small bowl, combine chopped green onion, 1 tsp sugar, 1 tsp fish sauce, 1 tsp vegetable oil and mix well. Microwave for 30 seconds on medium.
- To make the sauce, saute the minced garlic and shallot till fragrant, add dried satay chili. 1 tbsp fish sauce and 1 tsp sugar. Stir well over low heat till combined.
- With a knife/kitchen scissors, hit the side of your egg with a quick, decisive whack. This should cut through the shell. Then use scissors to cut off the side off the egg and remove.
- Pour out and gather the egg white and yolk into a bowl to easily trim of the "cap". Use a spoon to transfer the yolk and some of the egg white back to the shell.
- Place the egg on a grill and add 1/2 tsp of the sauce, scallion oil and toppings of choice
- Grill on low till the egg solidify yet still soft and gooey.
- Serve hot with a sprinkle of pepper.
