Bánh tép chiên giòn | Crispy tiny shrimp fritters

Crispy tiny shrimp fritters are a simple dish in Vietnamese cuisine. This is a light dish, often served with sweet and sour fish sauce. Crispy, fragrant, and savory.
- 150 gram fresh shrimp
- 1/2 taro
- 1/2 sweet potato
- 1/2 carrot thinly sliced, pickled for serving
- 100 gram wheat flour
- 50 gram rice flour
- 1/2 tsp turmeric powder
- 1 tsp sugar
- 1 tsp seasoning powder
- 200 ml beer
- 100 ml water
- Fresh vegetables (lettuce, herbs, cilantro, basil...)
- 3 tbsp fish sauce
- 6 tbsp water
- 1 tbsp lime juice
- 2 tbsp sugar
- 1 tsp minced chili
- 1 tsp minced garlic
- In a bowl, mix together wheat flour, rice flour, a little turmeric powder, 1 teaspoon sugar, 1 teaspoon seasoning powder, 200ml beer, and 100ml water. Stir well and let the batter rest for 1-2 hours.
- Clean the fresh shrimp and drain.
- Peel the taro and sweet potato, then shred into short strands.
- After the batter has rested, add all shredded taro, sweet potato, and fresh shrimp into the batter bowl and mix well. Reserve some shrimp to put on top of the cakes when frying.
- Heat plenty of oil in a pan. Once the oil is hot, scoop a portion of the batter mixture, add some shrimp on top, then put it into the frying pan. Fry until golden and crispy, and repeat with the remaining batter mixture.
- Prepare the sweet and sour dipping sauce. When serving, cut the cakes into pieces, wrap with fresh vegetables, and dip in the sauce. Mix sugar, fish sauce, water, lime juice, add pickled carrot, minced garlic, minced chili, and stir well.
