Do you think that you can make this roasted chicken rice in a rice cooker? It's ridiculously easy and the end result is juicy moist and succulent chicken with a shiny, sweet, glaze rested over some cooked rice full of garlic flavors. Let me show you how to make it!
- Skill Level: Child Friendly
- 1 chicken leg quarter
- 1 cup rice
- 1 head garlic minced
- 1 tbsp oyster sauce
- 3 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp five-spice powder
- 1/2 tsp salt
- 1/2 tsp pepper
- tumeric powder
- vegetable oil
- 2 tsp stock powder
- Sauté the minced garlic until fragrant.
- In a large mixing bowl, combine 1.5 tbsp of soy sauce, a tbsp of sugar, half a tsp of stock powder, a tsp of minced garlic, a quarter tsp salt, half a tsp of five-spice powder, a pinch of turmeric powder, and a tbsp of oyster sauce or vegetable oil. Stir well to dissolve, then combine with the chicken leg quarters and mix well to coat the chicken leg with the marinade. Cover and leave to marinate for about 1 hour or better overnight in the fridge.
- Heat some oil in a pan, and pan-fry the chicken over high heat until the skin is crispy.
- Rinse the rice a few times and transfer to the rice cooker, add a tbsp of fried garlic, a tsp of stock powder, some salt, and pepper to taste.
- Add water to roughly cover the rice and place the seared chicken leg on top. Press cook as normal.
