- 5-7 chicken feet
- cooking wine
- ginger peeled, sliced
- garlic chopped
- 2 tbsp black bean sauce
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1/2 tsp sesame oil
- 1 tbsp tapioca starch
- spring onion
- green chillies
- Rinse the chicken feet with cooking wine and ginger to remove the smell, cut off the nails.
- Drain well and combine in a container with 100g of tapioca starch. Toss well to coat.
- Deep fry until golden brown, then transfer and let rest on a rack to drain off the excess oil.
- Sauté some minced garlic and ginger until fragrant and toss well with the fried chicken feet. Lower the heat and add 2 tbsp of soy sauce, a tbsp sugar, half a tsp of sesame oil, and 2 tbsp of black bean sauce, add a cup of water, and bring to a boil.
- Mix a tsp of tapioca starch with water and slowly pouring to thicken the sauce.
- Transfer to a bowl and then steam in a pressure cooker for about 30 minutes.
- Serve with a sprinkle of chopped scallion and green chili slices.
