  • Rinse chicken feet with cooking wine and ginger. Cut off and discard the tips of the claws. Use knife to make a long cut from the leg to the foot balm.
  • Bring a large saucepan of water to a boil. Add some cooking wine, and ginger. Blanch the chicken feet for about two to three minutes to remove the bad smells.
  • Peel and crush half a head of garlic, then squeeze to extract the garlic juice. Combine the garlic juice with a teaspoon of salt, a tablespoon of minced chilies, a tablespoon of sugar, a teaspoon of stock powder, a tablespoon of vegetable oil, and a dash of cooking wine. Mix well.
  • Add the blanched chicken and toss well. Cover and refrigerate for about 1 hour.
  • Grill over charcoal or in an air fryer for about 10 minutes at 190 degrees Celsius.
  • Add a tablespoon of red pepper flakes to the remaining marinade and brush all over the chicken feet. Grill for another three to five minutes.
  • Serve with some Vietnamese mint and cucumber.
