Spicy chicken feet | Chân gà sốt cay

Chewy crunchy chicken feet tossed in a spicy and savory sauce... What an appealing salad, best served with beer.
- 500 gr boneless chicken feet
- 5 stalks lemongrass half bruised, half sliced
- 2 chili sliced
- 5 kumquats sliced
- 1/2 a green mango cubed
- 3-4 cloves garlic and shallots minced
- 3 tbsp Fish sauce
- 2 tbsp sugar
- 1 tbsp water
- 1 tsp chili powder
- 1 tbsp oyster sauce
- Bring a large sauce pan filled half-way with water to a boil. Add 1 tsp salt and the chicken feet. Cook for 5 minutes. Transfer to a bowl of cold water and leave for about 5 minutes. Then cut them into bite-sized pieces.
- Heat some oil in a pan, add minced shallot and garlic and sauté till fragrant. Then add 3 tbsp fish sauce, 2 tbsp sugar, 1 tsp water, 1 tsp chili powder, and 1 tbsp oyster sauce and simmer on low until slightly thickened.
- In a large mixing bowl, combine the chicken feet, green mango, chili, sliced lemongrass and sliced kumquat. Pour the sauce over and toss well. Enjoy!
