Bắp xào - Stir-fried Corn

A popular street food snack in Vietnam
Ingredients
- 2 cups corn
- 3-5 stalks spring onion white part shredded, green part chopped
- 3 tbsp dried shimps soaked in hot water 20 mins
- 1 tbsp butter/magarine
Instructions
- Heat some vegetable oil in a pan over medium heat. Add the white part spring onion and fry until fragrant and quite golden.
- Add the corn and stir-fry for 1 minute. Add salt, sugar, chicken stock to your taste. Cover the lid and cook for 1 minute if you use sweet corn. If you use glutinous corn, add a few tablespoons water and cook 5 minutes, covered, until soft.
- Then add the dried shrimps and butter and stir for 1-2 minutes. Finally add the chopped spring onion and cook for another minute.
- Transfer to a serving plate. Serve with some hot sauce as a drinking snack.
