Coconut Sea Snails

Ăn ốc or snail eating is the national pastime in Vietnam. Among many sauce options for sea snails, coconut sauce is always the favorite. It is the classic street food snack to have when hanging out with friends. Just put one in your mouth and suck hard until you are rewarded. Yep, that is how they work. Let learn how to make this delicious dish at home.
- 1 cup Grated fresh coconut
- 50 g Vietnamese Coriander
- 1 tbsp butter
- 1 tbsp garlic minced
- 1 kg Sea Snails (Ốc len or Ốc Cà Na)
- sugar and fish sauce
- Mix one cup of grated fresh coconut with half of cup of hot water. Leave to sit 5 minutes, then squeeze out to get the first press of coconut milk.
- Add another cup of hot water, and then squeeze to get the second press in another bowl.
- In a large wok, sauté some minced garlic until fragrant. Then add the snails, 1 tbsp of sugar, 1 tbsp of fish sauce, and the coconut milk of the second press. Bring to a boil, cook, and stir over high heat until sauce is reduced by half.
- Lower the heat and add coconut milk from the first press. Simmer on low until slightly thickened. Then add Vietnamese Coriander or “rau răm”. Add some coconut ribbons to add more texture and flavor. Stir well and take off the heat.
