Recipe: Crab Meat and Glass Noodle Stir-fry - Miến xào cua

Ingredients
- 200 g crab meat season with some cracked pepper (7 oz)
- 200 g glass noodle soaked in water for 15 mins and toss with 2 tsp sesame oil
- 20 g dried woodear mushrooms soaked in hot water and shred finely
- 100 g bean sprouts
- 50 g chinese celery cut into 3-in lengths
- 1/2 cup yellow omelette strips
- 1 carrot shredded
- 1 onion cut into slices
- 1/2 tsp chicken stock
- 1 tsp fish sauce
- pepper
- Chili
- garlic băm
Instructions
- Season the crab meat with some cracked pepper, 1/2 tsp chicken stock, 1 tsp fish sauce. Mix well and set aside for 15 mins.
- In a wok, heat 1 tbsp vegetable oil and fry some minced garlic until fragrant and turn quite golden. Then toss in the seasoned crab meat and stir-fry for about 30 secs so the seasonings can absorb into the crab meat.
- Now add the carrots, onion, woodear mushrooms and stir-fry for 1 min before adding the bean sprouts and Chinese celery. Gently stir for about 30 secs and season to your taste.
- Make some room in the center of the wok, add 1 tsp vegetable oil and then toss in the soaked glass noodles. Gently stir everything up under medium high heat until the noodles turn quite translucent.
- Transfer to a serving plate and garnish with some yellow omelette strips, some pepper, coriander and chili slices on top.
