Snowflake Bread - Bánh Mì Bông Tuyết

This gorgeous, party-ready bread will bring your Christmas guests together. There might be no snow in tropical countries like Vietnam, but we can make snowflakes! Pull apart soft and fluffy snowflake bread with sweet chocolate peeking through. Snowflake bread with unique shape looks good and tastes even better!

- 300 g bread flour
- 30 g sugar powder
- 1 egg
- 155 g warm milk
- 40 ml whipping cream
- 30 g cream cheese
- 25 g unsalted butter room temperature
- 3 g instant yeast
- 1.5 g salt
- 1.5 tsp cinnamon powder
- 40 g chocolate chip
- Combine flour, sugar, yeast and salt in a stand mixer and mix well. Then, add an egg and warm milk. Mix well for about 10-15mins until the dough is formed. Add butter and knead for another 2-3mins until the dough is nicely firm and does not stick to the mixing bowl.
- Cover and proof (for abour 30-45mins).
- In a bowl, combine chocolate chip, whipping cream and cream cheese. Place this bowl in a larger bowl of hot water. Stir until homogeneous.
- After proofing, punch to deflect the dough. Briefly knead for a few minnutes then divide into 4 equal portions. Shape each portion into a nice ball, dust it with flour and roll into a round and thin disc.
- Lay out the first disc of dough on a baking tray light with parchment paper. Spread 1/3 of the chocolate sauce all over the surface of the disk, leaving about 1 inch empty around the rim. Sprinkle 0.5tsp of cinnamon powder, use a pastry brush to brush some water around the rim of the dough disc. Then, stack the other disc on top, pinch to stick the two diccs together. Repeat with another layer of chocolate sauce and then another disc of dough. Once finished with all four layers, pinch the edges together.
- Use a round object with about two inches in diameter, place it in the center of the disc and press down gently. Then, cut the dough into 8 equal portions, leaving the center part untouched.
- Divide each part in half so you have 16 equal portions. To turn the dough into snowflakes, pick up two adjacent doughs, twist them twice and then press the outer edges together. Repeat with the remaining seven pairs of dough wedges. There you have cinnamon snowflake bread!
- Preheat the oven at 170 degrees Celsius for 10mins.
- Cover the dough and leave to rest for about 20mins, then brush with milk.
- Bake in the preheated oven for 20mins at 170 degrees C or 350 degrees F.
- Once finished baking, sprinkle with some powdered sugar.
- Served with a side bowl of chocolate sauce (optional).
