This salad is a common appetizer for wedding or housewarming parties as it looks very pleasing to the eyes yet still very easy to make. The ingredients are very flexible: you can use whatever salad ingredients in season. Just make sure you have a good variety of color and texture and your dish will look and taste amazing. The mixing should be done on the table, so the salad is fresh and not soggy.
- 100 g pork belly 3.5 oz (or chicken)
- 100 g shrimps
- 200 g cucumber core removed and julienned
- 200 g carrot julienned
- 200 g lotus stem/ daikon julienned
- 200 g banana blossom/ red cabbage julienned
- 100 g red onion/ red bell pepper julienned
- 100 g shredded beef jerky or shredded dried squid/fish
- 3 tbsp roasted sesame
- *For the dressing/vinaigrette*
- 2 tbsp sugar
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 2 tsp minced garlic and chili
- *Others*
- 3 tbsp roasted sesame
- 4 tbsp roasted peanuts crushed
- 8 prawn crackers or 3 sesame crackers
- To serve, pour the dressing over the salad. Mix well. Then add roasted sesame, peanuts or prawn cracker chips. Serve on top of prawn/sesame cracker.
- In a small bowl, combine the fish sauce, sugar and lime juice. Stir well to dissolve. Add minced garlic and chili on top at last to keep it afloat.
- Boil the shrimps for 3-5 minutes until the color changes to orange. Then peel, devein and slice each shrimp lengthwise in half.
- Arrange all the julienned vegetables around the platter together with the shredded beef jerky/dried fish/ squid, pork and shrimps. Place the dressing bowl in the center of the platter.
