  • Beat the egg until fluffy. Add coconut milk and pandan extract. Stir well.
  • In a separate bowl, mix together all the dry ingredients: all-purpose flour, corn starch, sugar, baking powder, coconut flakes and salt
  • Combine the dry ingredients with the wet ingredients. Let the batter rest for 15 minutes.
  • Preheat the waffle iron and grease with butter. Add one ladleful of the batter into the waffle iron. Press and hold for a few seconds. Then cook until golden brown. Serve just like that as a snack or with syrup / honey / powder sugar / toppings of your choice.
