- For the dough:
- 500 g bread flour
- 60 g sugar
- 5 g salt
- 7 g instant yeast
- 50 g unsalted butter
- 1 egg
- 25 g milk powder
- 250 ml water
- For the fillings:
- 100 g oninon diced
- 150 g potato diced
- 100 g carrot diced
- 150 g chicken breast diced
- oil
- garlic finely minced
- salt
- pepper
- stock powder
- 15 g butter
- Curry powder
- 2 eggs
- Tempura flour
- wheat flour
- For the dough, in the mixing bowl, combine all the ingredients except for the butter. Make sure that the salt and the yeast are not in direct contact. Mix well in a stand mixer.
- You might need to adjust the water amount depending on the humidity of the weather. Knead for about 5 to 10 minutes until the dough comes together then gradually add the butter.
- Knead on medium speed for about 15-20 minutes until you get a soft and smooth piece of dough.
- Place it into a mixing bowl, grease with some oil. Cover and let it rest for one hour.
- When the dough has doubled in size, punch it to release the air and knead again for about one to two minutes to release all the air bubbles inside.
- For the curry filling, in a pan, add 1 tbsp oil and sauté the minced garlic until fragrant, then add chicken breast, carrot, potato, onion. Stir over medium heat and season to taste with salt, pepper and stock powder.
- Add some water, 1 tbsp Curry powder and stir well and cook under medium heat until all the vegetables are soft. When the water reduces by half, mix butter and wheat flour with water, stir well, and turn off the stove.
- Knead the dough for about 1-2 more minutes to release all air bubbles inside, and divide into 50g portions.
- Roll out each portion into the thin disk and then add the fillings in the center. Gather the edges and pinch to seal. Shape into a nice ball.
- Drop it into the beaten egg, then roll over the Tempura flour. Then place on the baking tray and cover to proof for another one hour.
- Heat vegetable oil until the bubbles appear around the chopstick. Deep fry the dough until golden brown. Then place on paper towel to drain off the excess oil.
