This sweet snack can bring back fond childhood memories of many Vietnamese generations from Southwestern regions of Vietnam.
- Cuisine: Southern Vietnam
- Course Snack
- Skill Level: Easy
- 300 g yellow sweet potato shredded
- 70 gr all-purpose flour
- 70 gr palm sugar
- 100 ml water
- 1/2 tsp salt
- sasame
- In a large mixing bowl, combine sweet potato with salt and flour and spray with some water, just enough to add moisture. Arrange about 2 tablespoon amount of the mixture on a shallow ladle and press to shape it into a small and rather flat nest. Repeat until finish the mixture.
- In a large skillet over medium high heat, sear the little sweet potato nests on both sides without using any oil until dry and slightly golden on the edges. This is to make sure the fritters don't fall apart in the frying. Then shallow fry with oil till golden brown. Transfer to a rack to cool and drain off excess oil.
- In a small saucepan over medium heat, melt the palm sugar, then add salt and simmer on low till slightly thickened. Dip the fritters into the caramel sauce, one by one, until coated and sprinkle with roasted sesame seeds.
