Fried yardlong beans with scrambled eggs is a combination of fresh and tender yardlong beans with rich and creamy scrambled eggs, creating a unique and enticing flavor. The yardlong beans are pan-fried on both sides in oil until cooked. Then, the scrambled eggs are poured into the pan and stirred together with the yardlong beans until the eggs are cooked and the beans are evenly coated with the egg mixture. This dish is typically enjoyed hot, alongside steaming white rice.
- 100 g yardlong beans kept whole
- 1 tsp fish sauce
- 1/2 tsp seasoning powder
- 1/2 tsp black pepper
- Trim off the ends of the yardlong beans, rinse them thoroughly, keeping them whole. Place the beans in hot water briefly, then transfer them to a bowl of cold ice water.
- Heat oil in a pan, arrange the yardlong beans in a circular pattern in the pan, pressing them down slightly. Cook for about 1 minute.
- Crack the eggs into a bowl, add 1/2 teaspoon black pepper, 1/2 teaspoon seasoning powder, 1 teaspoon fish sauce, mix well, then pour the eggs over the beans. Add a few slices of horn pepper on top, cover with a lid, and cook over low heat until the eggs are cooked.
- Serve the dish with rice.
