  • Trim off the ends of the yardlong beans, rinse them thoroughly, keeping them whole. Place the beans in hot water briefly, then transfer them to a bowl of cold ice water.
  • Heat oil in a pan, arrange the yardlong beans in a circular pattern in the pan, pressing them down slightly. Cook for about 1 minute.
  • Crack the eggs into a bowl, add 1/2 teaspoon black pepper, 1/2 teaspoon seasoning powder, 1 teaspoon fish sauce, mix well, then pour the eggs over the beans. Add a few slices of horn pepper on top, cover with a lid, and cook over low heat until the eggs are cooked.
