Beef and enoki mushroom roll soup is a delicious combination of tender beef wrapped around delicate enoki mushrooms, creating a rich and flavorful soup.
- 1 pack enoki mushroom
- 100 g silken tofu cut into rounds
- 100 g beef sliced
- 1 carrot cut into 1cm slices
- 1 small ginger julienned
- green onion tops
- 1 tbsp stock powder
- 1 tbsp fish sauce
- 1/2 tsp sugar
- 1/2 tsp salt
- Enoki mushrooms, roots removed, washed thoroughly, and cut into bite-sized pieces. Soak the mushrooms in salt water for about 10 minutes, then remove and rinse with clean water. Roll the beef with the enoki mushrooms.
- Sauté the green onion tops and julienned ginger until fragrant, add the rolled beef and mushrooms to the pan, sear until both sides are slightly golden. Then add 1 liter of water and the carrots, cook for about 7 minutes before adding the silken tofu. Adjust seasoning with stock powder, fish sauce, sugar, salt, then simmer for an additional 5 minutes before turning off the heat.
- Serve the soup in a bowl, garnish with chopped coriander, and it's ready to be served.
