Sweet Potato Mochi Bread | Bánh mì mochi khoai lang

Crispy on the outside, soft and chewy on the inside, these sweet potato bread balls are great healthy snacks for kids and adults alike. The recipe is inspired from Korean Sesame Mochi Bread.

- 150 gr orange sweet potato peeled and sliced
- 80 gr tapioca starch
- 40 ml unsweetened fresh milk
- 40 gr palm sugar
- Steam the sweet potatoes for about 10-15 minutes until fork tender. Mash the potatoes then combine palm sugar, fresh milk, and tapioca starch in a mixing bowl. Knead with your hand until a dough is formed. Then divide into 14 balls, about 25g each. You can also use a dice of cheese as filling.
- Place the potato balls on a baking tray, spray water over the top and bake at 170°C for 20 minutes.
